Raspberry Molasses Brownies

Take brownies to the next level with this gooey chocolatey recipe. The adults will be hiding these from the kids they are that delicious. I created this recipe when asked to bring brownies to a kid-friendly Halloween party and new I wanted to take it up a notch. These brownies are easy to bake and guaranteed to be gooey thanks to a small amount of molasses added into the recipe.

As always, this recipe is created for those at 7,000 feet above sea level. If baking at sea level, decrease the amount of flour by 2 tablespoons.

Ingredients:

  • 1 1/2 sticks unsalted butter

  • 4 oz unsweetened chocolate

  • 3 large eggs

  • 2 c sugar

  • 1/3 c raspberry jam

  • 3 tbl molasses

  • 1 c + 2tbl flour

  • 1/4 tsp salt

  • 1 c chocolate chips

  • 12 oz fresh raspberries

  • powdered sugar

Directions:

  1. Preheat oven to 350 degrees.

  2. Melt butter and chocolate in large saucepan slowly over low heat until smooth. Remove from heat and let cool 5-10 minutes.

  3. Whisk in eggs, sugar, jam and molasses. Slowly stir in salt and flour.

  4. Fold in chocolate chips and fresh raspberries.

  5. Transfer batter into 9 inch round pan and bake about 4-45 minutes, or until toothpick inserted into center comes out with moist crumbs attached.

  6. Allow to cool for 1 hour before slicing brownies and serving on a platter.

  7. Dust brownies with powdered sugar and some raspberries for garnish.

Serving tip: If not serving immediately, heat up brownies for 10 seconds in microwave and serve with a dollop of raspberry jam.
